WHOLEMEAL BROWN BREAD






It's very quick and simple to make at home. The deep cross in the loaf is supposed to let out the fairies – so that the bread won’t be jinxed by evil spirits! In reality, of course, it’s just to allow the heat to penetrate the loaf as it’s cooking.

Ingredients (Makes 1 Loaf)
225 g whole meal flour
225 g plain flour
1 tsp salt
1 tsp bicarbonate of soda
50 g mixed seeds, such as sesame, pumpkin or sunflower (optional)
25 g butter (optional)
1 egg
375-400 ml Buttermilk
You will need a 25cm diameter tart tin, 3 cm deep

Cooking Instructions
Preheat the oven to 220° C (425° F)
Sift together the flours, salt and bicarbonate of soda in a large bowl and mix with the seeds (if using). Add the butter (if using), and rub into the flour mixture with your fingertips until it resembles breadcrumbs. Make a well in the centre.
In another bowl, whisk the egg with the buttermilk and pour most of the liquid into the flour mixture. Using one hand with your fingers outstretched like a claw, bring the flour and liquid together, adding more buttermilk if necessary. The dough should be quite soft, but not too sticky.
Turn onto a floured work surface, and gently bring it together into a round about 4cm deep. Cut a deep cross on top
Place on a baking tray and bake in the preheated oven for 15 minutes, then turn down the heat to 200°C (400°F), and cook for 30 minutes more. When cooked, the loaf will sound slightly hollow when tapped on the base. Allow to cool on a wire rack.


Pane integrale
È molto veloce e semplice da fare a casa! La profonda croce al centro della pagnotta è fatta per far uscire le fate, così che il pane non sarà infestato da spiriti maligni! In realtà, naturalmente, è solo per permettere al calore di penetrare il pane mentre esso cuoce!!

Ingredienti (per una pagnotta)
225 g farina integrale
225 g di farina semplice, tipo 0
1 cucchiaino di sale
1 cucchiaino di bicarbonato di sodio
50 g semi misti, come il sesamo, zucca o di girasole (opzionale)
25 g burro (opzionale)
1 uovo
375 - 400 ml di latticello (è un residuo liquido della lavorazione della panna per ottenere il burro; il latticello è ricco di fermenti lattici ed è un alimento quasi totalmente privo di grassi. A Milano i negozi NaturaSì e SuperPolo vendono la stessa marca che è una delle migliori made in Germany: "Berchtesgadener Land" mentre Delicatessen - negozio di specialità tirolesi - vende quello della"Vipiteno". Altrimenti potete sostituirlo con pari quantità di yogurt bianco).
Avrete bisogno di uno stampo da crostata di circa 25 cm di diametro, profondo 3 cm

Preparazione
Preriscaldare il forno a 220 ° C (425 ° F)
Setacciate insieme le farine, il sale e bicarbonato di sodio in una grande ciotola e mescolare con i semi (se li si utilizza). Aggiungere il burro (se lo si utilizza), mescolare il composto con la farina con la punta delle dita finché non sembra pangrattato. A questo punto fare la fontana.
In un’altra ciotola, sbattere l’uovo con il latticello e versare parte del liquido nella miscela di farina. Con una sola mano con le dita tese come un artiglio, mischiare la farina e liquido insieme, aggiungendo più latticello se necessario. L’impasto deve essere abbastanza morbido, ma non troppo appiccicoso.
Girare su un piano di lavoro infarinato, e delicatamente formare una pagnotta e sopra fare un profondo taglio a croce.
Mettere su una teglia e cuocere in forno preriscaldato per 15 minuti, poi abbassate il calore a 200° C (400° F), e cuocere per altri 30 minuti. A cottura ultimata il pane sembrerà vuoto se lo si batte con le nocche sul fondo. Lasciare raffreddare su una gratella per dolci
